For the Cucumber Salad

  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped pistachios
  • ¼ cup chopped fresh dill
  • ¼ cup chopped fresh chives

For the Dressing

  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Prepare the cucumbers: Wash and dry the cucumbers thoroughly. Chop each cucumber in half lengthwise. Place each half flat-side down on a cutting board. Using the flat side of a knife and your hand, gently smash each cucumber half to break them up slightly for texture. Then chop the smashed cucumbers into 1-inch pieces and transfer to a medium-sized bowl. For larger cucumbers, cut them in half both horizontally and vertically before smashing.
  2. Add avocado and salad ingredients: Peel the ripe avocado and chop it into chunks. Add the avocado pieces to the bowl with the cucumbers. Then add crumbled feta cheese, chopped pistachios, fresh dill, and fresh chives to the bowl.
  3. Make the dressing: In a small glass jar or bowl, combine extra virgin olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper. Whisk vigorously or shake the jar to emulsify the ingredients, creating a smooth dressing.
  4. Toss and serve: Pour the dressing over the salad mixture in the bowl. Toss gently to combine all ingredients evenly. Taste and adjust seasoning if needed. Optionally, sprinkle extra fresh herbs on top before serving. Enjoy immediately for best freshness.
