Ingredients

Scale

For the Bread:

  • 1/2 cup (113g) unsalted butter, softened
  • 2/3 cup (133g) granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup (120ml) milk
  • 2 medium apples, peeled, cored & diced (mix of tart & sweet)
  • 1/3 cup (67g) brown sugar
  • 1 tsp ground cinnamon

For the Glaze:

  • 1/2 cup (60g) powdered sugar
  • 12 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper to ensure easy removal of the bread after baking.
  2. Make Cinnamon-Apple Mixture: In a bowl, combine the diced apples with brown sugar and cinnamon. Toss to coat evenly. This mixture adds a sweet, spiced apple layer within the bread.
  3. Prepare the Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract for aroma and sweetness.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add these dry ingredients to the butter mixture, alternating with the milk. Mix gently until just combined to avoid overworking the batter which could result in a tough loaf.
  5. Assemble the Loaf: Pour half of the batter into the prepared loaf pan. Spoon half of the cinnamon-apple mixture over the batter. Repeat with the remaining batter and apple mixture. Use a knife to lightly swirl through the batter to create a marbled effect, enhancing both appearance and flavor.
  6. Bake: Place the loaf pan in the preheated oven and bake for 50–55 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with just a few moist crumbs.
  7. Cool: Let the bread cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely, which helps the texture set before glazing.
  8. Prepare Glaze: In a small bowl, whisk together powdered sugar, 1 to 2 tablespoons of milk, and vanilla extract until smooth and pourable. Adjust milk quantity to achieve desired glaze consistency.
  9. Glaze the Bread: Drizzle the glaze evenly over the cooled bread. Let it set before slicing.
  10. Serve: Slice and enjoy your Amish Apple Fritter Bread warm or at room temperature for the best flavor and texture.

Notes

  • Use a combination of tart (Granny Smith) and sweet (Honeycrisp) apples for depth of flavor.
  • Don’t overmix the batter; this keeps the bread tender and light.
  • For a richer spice profile, add 1/4 tsp nutmeg or allspice to the cinnamon mixture.
  • The bread tastes even better the next day after the flavors meld.
  • This bread can be frozen; for best results, glaze it after thawing.
