Ingredients

Scale

Pastry and Egg Mixture

  • 1 sheet of puff pastry, thawed
  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste

Fillings

  • 4 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh spinach, sautéed

Finishing

  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking the pinwheels.
  2. Prepare Puff Pastry: Roll out the thawed puff pastry on a lightly floured surface to smooth out any creases and make it even.
  3. Make Egg Mixture: In a bowl, whisk together the 4 eggs, 1/4 cup milk, salt, and pepper until well combined.
  4. Assemble Filling: Spread the egg mixture evenly over the rolled-out puff pastry. Then sprinkle crumbled bacon, shredded cheddar cheese, crumbled feta cheese, and sautéed spinach evenly on top.
  5. Form the Pinwheels: Carefully roll the puff pastry from one long side into a tight log shape, ensuring the filling stays inside.
  6. Slice the Rolls: Use a sharp knife to cut the log into 12 equal pieces. Place each piece cut-side up on the prepared baking sheet, spaced slightly apart.
  7. Apply Egg Wash: Brush the tops of each pinwheel with the beaten egg to help them achieve a beautiful golden color while baking.
  8. Bake: Bake in the preheated oven for 15-20 minutes or until the pinwheels are puffed and golden brown. Remove from the oven and allow to cool slightly before serving.

Notes

  • You can substitute bacon with turkey bacon or omit for a vegetarian version (excluding bacon).
  • Sauté the spinach lightly to remove excess moisture and avoid soggy pastry.
  • Ensure the puff pastry is well chilled before rolling and slicing to maintain shape.
  • Serve warm for the best flavor and texture.
  • These pinwheels can be prepared ahead of time and baked just before serving.
