For the Bread and Cheese:

  • 1 round rustic bread loaf
  • 1 wheel brie cheese (approx. 12 ounces, top rind removed, triple cream preferred)

  • 1/4 cup shelled pistachios, chopped
  • 2 tablespoons fresh thyme leaves, divided

To Season and Bake:

  • 2 tablespoons olive oil
  • Coarse salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the brie and bread.
  2. Prepare the Bread: Slice off the top quarter of the rustic bread loaf. Using the wheel of brie as a guide, trace around it with a knife and carefully hollow out the center of the bread to create space for the cheese. Around the edge, make vertical slices about 1.5 inches apart cutting three-quarters down but not through, to create pull-apart sections.
  3. Season the Bread: Brush the inside cavity and the pull-apart sections with olive oil. Season generously with coarse salt and freshly ground black pepper. Sprinkle half of the fresh thyme over the seasoned bread to infuse flavor.
  4. Add Brie and Toppings: Place the wheel of brie into the hollowed-out center of the bread. Sprinkle the remaining thyme leaves over the brie. Evenly spoon the fig jam across the top of the brie, then drizzle honey over everything. Finally, sprinkle chopped pistachios on top for crunch.
  5. Bake: Replace the bread loaf top. Place the prepared bread on a foil-lined baking sheet to catch any melted cheese. Bake in the preheated oven for about 20 minutes, or until the brie is soft and melty and the bread is golden and toasted.
  6. Serve: Remove from the oven and let cool slightly. If desired, toast the bread pieces scooped from the center separately and serve alongside for dipping into the warm, gooey brie and topping mixture. Enjoy immediately.
