Wet Ingredients
- ½ cup unsalted butter
- ½ teaspoon vanilla extract
- 2 eggs
Dry Ingredients
- 1 cup granulated sugar
- 1 cup all-purpose flour
- ½ teaspoon salt
Add-ins
- ½ cup white chocolate chips
- ½ cup blueberries – fresh, washed and dried
- Melt Butter and Soften Chocolate: Melt the unsalted butter in a saucepan over medium heat. Place the white chocolate chips in a measuring cup or bowl. Once the butter is melted completely, pour it over the white chocolate chips and let sit for 5 minutes. Whisk the mixture until smooth and then let it cool for about 30 minutes until it starts thickening.
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and center the oven rack. Line an 8×8 inch baking pan with parchment paper and lightly spray it with non-stick cooking spray to prevent sticking.
- Combine Butter Chocolate and Sugar: In a separate bowl, whisk the cooled butter and white chocolate mixture with granulated sugar for 1-2 minutes until fully combined and some sugar is absorbed.
- Add Vanilla and Eggs: Mix in the vanilla extract followed by the eggs, whisking until the batter is smooth and homogeneous.
- Add Flour and Salt: Fold in the all-purpose flour and salt using a silicone spatula, gently stirring until the batter just begins to come together. Avoid overmixing.
- Incorporate Blueberries: Carefully fold in the fresh blueberries, being cautious not to overmix so the berries remain whole and the batter doesn’t become tough.
- Bake the Blondies: Pour the batter evenly into the prepared baking pan and spread it out. Bake in the preheated oven for 35 to 45 minutes or until the edges and top are caramelized and brown. Perform a toothpick test in the center to ensure it comes out with few crumbs or clean.
- Cool and Slice: Allow the blondies to cool completely to room temperature before removing them from the pan. Cut into 12 to 16 slices and serve.
Notes
- Store at room temperature in an airtight container for up to 5 days.
- Refrigerate in an airtight container for up to 10 days to extend freshness.
- Freeze by wrapping tightly in plastic wrap and placing in an airtight container for up to 3 months.
- Be gentle when folding in blueberries to avoid bursting them into the batter.
- Use fresh, washed, and thoroughly dried blueberries to prevent excess moisture in the batter.
