Blueberry Compote

Instructions

  1. Make the Blueberry Compote: In a small saucepan, combine the blueberries, honey or maple syrup, and lemon juice over medium heat. Let the mixture simmer gently for about 5 minutes, stirring occasionally, until the blueberries soften and begin to break down.
  2. Thicken the Compote (Optional): If a thicker compote is desired, dissolve the cornstarch in a small amount of water, then stir it into the blueberry mixture. Continue cooking briefly until the compote thickens. Remove from heat and allow it to cool completely.
  3. Prepare the Yogurt: In a mixing bowl, stir together the Greek yogurt and vanilla extract until smooth. Taste the mixture and add more honey or maple syrup if you prefer a sweeter flavor, folding well to combine.
  4. Fill the Molds: Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full to allow room for the blueberry compote.
  5. Add the Blueberry Swirl: Drop a spoonful of the cooled blueberry compote onto the top of each yogurt-filled mold. Using a toothpick, gently swirl the compote into the yogurt to create an attractive marbled effect.
  6. Freeze the Bites: Place the molds in the freezer and let them freeze for at least 3 hours, or until fully solid.
  7. Serve and Store: Once frozen, carefully remove the yogurt bites from the molds and store them in an airtight container in the freezer. For the best texture, allow them to sit at room temperature for 2–3 minutes before eating.
