Instructions

  1. Cook Quinoa: Prepare 2 cups of quinoa according to package directions using your preferred method—stovetop, rice cooker, or Instant Pot—until fluffy and tender. Once cooked, fluff with a fork to separate the grains.
  2. Steam Broccoli: Heat ½ inch of water in a pan or pot. Add broccoli florets, cover, and steam for 3-5 minutes, until the broccoli is bright green and soft in the center but still has a slight crunch.
  3. Combine Ingredients: Preheat your oven to 350°F (175°C). Lightly spray a deep 9 x 9 inch baking dish with cooking oil and set aside. In a large mixing bowl, combine the cooked quinoa, cooked chicken, steamed broccoli, egg, chicken stock, half of the shredded cheese, dried basil, oregano, salt, and pepper. Mix thoroughly until evenly incorporated.
  4. Assemble Casserole: Press the quinoa mixture evenly into the prepared baking dish. Sprinkle the remaining shredded cheese evenly over the top of the casserole.
  5. Bake: Cover the baking dish with foil and bake in the preheated oven for 40 minutes. Then remove the cover and continue baking uncovered for an additional 5 to 10 minutes to allow the cheese on top to brown and become bubbly.
  6. Serve: Remove from the oven and allow to cool slightly. Portion the casserole into bowls or plates and serve warm.
