A delicious and indulgent Brownie Bottom Cheesecake that features a rich, fudgy brownie base topped with a creamy, smooth cheesecake layer. This dessert combines two classic favorites into one irresistible treat, perfect for any occasion.

Ingredients

Scale

Brownie Base

  • 1 box (440g/15.25 oz) chocolate brownie mix
  • Ingredients required for brownie mix as per box instructions (typically eggs, oil, and water)

Cheesecake Layer

  • 2 packages (250g/8 oz each) cream cheese, softened
  • 2 large eggs
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan to ensure easy removal of the cheesecake later.
  2. Make brownie batter: Prepare the brownie batter according to the instructions on the box, which typically involves mixing the brownie mix with eggs, oil, and water until smooth.
  3. Bake brownie base: Pour and spread the brownie batter evenly into the bottom of the prepared springform pan. Bake for 30 minutes, or until the brownie is set and a toothpick inserted comes out with a few moist crumbs.
  4. Prepare cheesecake mixture: While the brownie base bakes, in a large bowl, beat the softened cream cheese, eggs, sugar, and vanilla extract together until the mixture is smooth and creamy.
  5. Add cheesecake layer: Spread the cheesecake mixture evenly over the warm, baked brownie base. There’s no need to cool the brownie before adding this layer.
  6. Reduce oven temperature: Lower the oven temperature to 325°F (163°C) to allow gentle baking of the cheesecake layer.
  7. Bake cheesecake: Bake the cheesecake for an additional 50 minutes, or until the cheesecake is set and slightly golden around the edges but still jiggles gently in the center.
  8. Cool completely: Allow the cheesecake to cool completely in the springform pan before releasing the side to prevent cracking or breaking.
  9. Optional serving: For extra indulgence, drizzle with chocolate sauce or top with whipped cream before serving.

Notes

  • Do not overbake the cheesecake; a slight jiggle in the center indicates it’s done and will set as it cools.
  • Ensure cream cheese is softened to room temperature to avoid lumps in the cheesecake mixture.
  • For best results, use a springform pan to remove the cheesecake easily without damaging it.
  • The brownie base can be made from scratch if preferred, adjusting the recipe accordingly.
  • Store leftovers covered in the refrigerator for up to 4-5 days.
