Instructions

  1. Soften the dates: Remove the pits from your Medjool dates and soak them in hot water for 5 minutes. This softens the dates, making them easier to blend and giving the filling a chewier texture.
  2. Blend the base mixture: Drain the water from the dates, then place them in a food processor along with the sunflower seed butter and vanilla extract. Blend until the mixture resembles a thick, sticky caramel.
  3. Add remaining filling ingredients: Add the protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again, stopping to scrape down the sides as needed, until the mixture is fully combined and smooth.
  4. Form the balls: Scoop the filling dough and roll it into balls about one tablespoon in size each, forming uniform bites.
  5. Chill the bites: For best results, place the balls on a lined baking sheet and freeze for at least 30 minutes. This firms them up before coating.
  6. Melt the coating: In a small microwavable dish, combine the dark chocolate and coconut oil. Microwave on high in 20-30 second intervals, stirring in between until fully melted and smooth.
  7. Dip and set: Dip each chilled ball into the melted chocolate coating one at a time, then place them back on the lined baking sheet to set. Allow the coating to harden before serving.
