Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 3 cups cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained

Other Ingredients

  • 1 cup cooked rice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup beef broth

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray or butter to prevent sticking.
  2. Cook Ground Beef and Onion: In a large skillet over medium heat, brown the ground beef and chopped onion together until the beef is fully cooked and the onion turns translucent. Drain any excess fat to keep the bake from being greasy.
  3. Season Beef Mixture: Add garlic powder, salt, and black pepper to the cooked beef and onions. Stir well to evenly season the mixture.
  4. Layer Cabbage: Place half of the chopped cabbage on the bottom of the prepared baking dish, creating the first layer of the casserole.
  5. Add Beef and Rice Layers: Spread the seasoned beef mixture evenly over the cabbage layer, then top this with an even layer of cooked rice.
  6. Pour Tomatoes: Pour the undrained diced tomatoes evenly over the rice layer to add moisture and flavor.
  7. Top with Remaining Cabbage and Broth: Add the remaining chopped cabbage as the top layer, then pour the beef broth evenly over the entire dish.
  8. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes to allow the flavors to meld and the cabbage to soften.
  9. Add Cheese and Finish Baking: Remove the foil and sprinkle the shredded cheddar cheese evenly over the top of the dish. Return to the oven and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  10. Cool and Serve: Let the casserole cool slightly before serving. This dish is delicious warm and offers a satisfying combination of textures and flavors.

Notes

  • For a lower sodium version, reduce or omit the added salt and use low-sodium beef broth and diced tomatoes.
  • You can substitute ground turkey or chicken for ground beef if preferred.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • Adding a pinch of smoked paprika or chili flakes to the beef mixture can add a subtle smoky or spicy kick.
  • If you prefer softer cabbage, you can sauté the cabbage briefly before layering.
