Ingredients

Scale

Seafood Filling

  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and freshly ground black pepper, to taste

Tortilla Bombs

  • 8 medium flour tortillas
  • Oil for frying (vegetable or canola oil)
  • Cooking spray (optional)

Instructions

  1. Prepare the Seafood Filling: In a mixing bowl, combine chopped shrimp, crab meat, cream cheese, shredded cheddar, green onions, mayonnaise, lemon juice, garlic powder, cayenne pepper, salt, and pepper. Mix thoroughly until well blended and creamy.
  2. Assemble the Tortilla Bombs: Lay a tortilla flat and spoon about 2 to 3 tablespoons of the seafood filling into the center. Fold the edges over the filling and roll tightly to form a sealed bomb shape. Repeat with remaining tortillas and filling.
  3. Seal the Bombs: To keep the bombs secure during cooking, use a little water or a beaten egg to moisten the edge of the tortilla before sealing it shut.
  4. Heat the Oil: In a deep frying pan or skillet, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the correct temperature for even frying.
  5. Fry the Tortilla Bombs: Carefully place the assembled bombs into the hot oil, a few at a time to avoid overcrowding. Fry for 2 to 3 minutes on each side or until the tortillas are golden brown and crispy.
  6. Drain and Serve: Remove the fried bombs with a slotted spoon and place on a plate lined with paper towels to absorb excess oil. Serve hot with salsa, sour cream, or your favorite dipping sauce.

Notes

  • Use fresh or thawed cooked seafood for best flavor and texture.
  • To make them less oily, you can bake the bombs in an oven at 400°F (200°C) for 15-20 minutes, flipping halfway through.
  • Adjust the spiciness by varying the amount of cayenne pepper or adding chopped jalapeños.
  • These bombs are best enjoyed immediately for optimal crispiness.
