Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt and pepper. Heat olive oil in a skillet over medium-high heat, then cook the chicken breasts for 6-7 minutes on each side until fully cooked through and no longer pink inside. Remove from skillet and let rest for a few minutes before slicing thinly to retain juices.
  2. Prepare the Avocado and Cheese: While the chicken rests, slice the avocado and arrange the cheese slices. Set aside for assembly.
  3. Prepare the Bread: Spread a thin, even layer of mayonnaise and Dijon mustard on each slice of bread to add flavor and moisture.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add a few slices of red onion and tomato atop the cheese layer. Place the remaining bread slices on top, mayo side down, to complete the sandwiches.
