Ingredients

Scale

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For the Spinach and Mushrooms

  • 8 ounces button or cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 2 tablespoons butter

For the Creamy Sauce

  • 4 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 1/3 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven and Prepare the Chicken: Preheat your oven to 375°F (190°C). Season both sides of the chicken breasts with salt, pepper, dried thyme, oregano, and basil. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown but not cooked through.
  2. Sauté the Mushrooms and Spinach: In the same skillet, melt butter over medium heat. Add sliced mushrooms and cook for 5-7 minutes until tender and browned. Add fresh spinach and sauté for another 2-3 minutes until wilted.
  3. Make the Creamy Sauce: In a bowl, whisk together cream cheese, heavy cream, Parmesan cheese, and chicken broth. Season with salt and pepper and mix until smooth and creamy.
  4. Assemble the Dish: Place seared chicken breasts in a baking dish. Spread the sautéed mushrooms and spinach over the chicken. Pour the creamy sauce evenly on top to cover the ingredients.
  5. Bake the Dish: Bake in the preheated oven for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbly. For a golden top, broil for 2-3 minutes at the end if desired.
  6. Serve and Enjoy: Remove the dish from the oven and let it rest for a few minutes. Serve it warm alone or alongside roasted vegetables or a fresh salad for a nutritious low-carb meal.

Notes

  • Use fresh herbs if available for enhanced flavor.
  • Make sure not to overcook chicken during searing; it will finish cooking in the oven.
  • For a thicker sauce, reduce the chicken broth slightly before mixing.
  • This dish is great for meal prepping and reheats well.
  • Feel free to use baby spinach or Swiss chard as alternatives.
