Ingredients

Scale

Cupcake

  • 15.25 ounces vanilla cake mix
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 2 teaspoons ground cinnamon

Frosting

  • ¼ cup cinnamon sugar
  • 4 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 3 to 4 tablespoons milk or cream
  • caramel sauce, for drizzling
  • 18 churro pieces (1-inch each)

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C). Line muffin tins with cupcake liners and set aside to prepare your batter.
  2. Mix cupcake batter: In a large mixing bowl, beat together the vanilla cake mix, vegetable oil, buttermilk, eggs, and ground cinnamon for 2 to 3 minutes until the batter is smooth and well combined.
  3. Fill and bake: Scoop the cake batter into the prepared muffin tins, filling each about two-thirds full. Bake for 15 minutes or until a toothpick inserted into the center comes out clean. Remove the cupcakes from the oven and transfer them to a cooling rack.
  4. Coat cupcakes with cinnamon sugar: While the cupcakes are still warm, dip their tops into a shallow dish filled with cinnamon sugar to give them that classic churro flavor. Allow cupcakes to cool completely.
  5. Prepare the frosting: In a large mixing bowl, beat together softened cream cheese, unsalted butter, vanilla extract, and ground cinnamon until smooth and creamy.
  6. Add powdered sugar and milk: Gradually add powdered sugar to the cream cheese mixture, beating continually. Since the frosting will be very thick, add 3 to 4 tablespoons of milk or cream one tablespoon at a time, beating well after each addition until the frosting reaches a thick, pipeable consistency.
  7. Frost the cupcakes: Transfer the frosting into a piping bag and pipe beautiful swirls on top of each cooled cupcake for an eye-catching finish.
  8. Garnish and serve: Drizzle the frosted cupcakes with caramel sauce and top each with a 1-inch piece of churro for a crunchy, flavorful garnish. Serve and enjoy!
