Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly to prevent sticking.
  2. Mash Bananas and Combine Wet Ingredients: In a large mixing bowl, mash the overripe bananas until smooth. Add the melted vegan butter, maple syrup, almond or oat milk, and vanilla extract, stirring until the mixture is creamy and well combined.
  3. Add Dry Leavening and Spices: To the wet ingredient mixture, add baking powder, baking soda, cinnamon, and salt. Stir gently to blend but do not overmix.
  4. Incorporate Flour and Oats: Gradually add the all-purpose flour and rolled oats into the batter, stirring until no dry flour remains but allowing some streaks for tenderness.
  5. Layer Batter and Cinnamon Swirl: Pour half of the batter into the prepared loaf pan and spread it evenly. Spoon half of the cinnamon swirl mixture over the batter, then use a knife to create swirls.
  6. Add Remaining Batter and Swirl: Pour the remaining batter over the first layer and smooth it out. Top with the remaining cinnamon swirl mixture and create additional swirls using a knife.
  7. Bake the Bread: Place the loaf pan in the preheated oven and bake for 50–60 minutes. Begin checking for doneness at around 50 minutes by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  8. Cool the Bread: Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely to preserve texture and flavor.
  9. Prepare Frosting (Optional): While the bread cools, mix the powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth to create the optional frosting. Spread over the cooled banana bread before slicing and serving.
