Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Cinnamon Sugar Mixture

  • ½ cup brown sugar, packed
  • 1 teaspoon ground cinnamon

Add-ins (Optional)

  • ½ cup chopped pecans or walnuts

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine 2 cups all-purpose flour, 1 cup granulated sugar, 1 ½ teaspoons baking powder, and ¼ teaspoon salt. Stir until well blended.
  3. Add Wet Ingredients: Pour in ½ cup melted unsalted butter, 2 large eggs, and 1 teaspoon vanilla extract into the dry mixture. Mix until just combined, being careful not to overmix to maintain a tender crumb.
  4. Prepare Cinnamon Sugar Mixture: In a separate small bowl, mix ½ cup packed brown sugar with 1 teaspoon ground cinnamon evenly.
  5. Layer Batter and Cinnamon Sugar: Spread half of the batter evenly into the prepared pan. Sprinkle half of the cinnamon sugar mixture over the batter. If using, sprinkle half of the chopped nuts over this layer.
  6. Top with Remaining Batter and Swirl: Dollop the remaining batter over the cinnamon layer in spoonfuls. Sprinkle the remaining cinnamon sugar and nuts on top. Using a butter knife, gently swirl through the batter to create a marbled cinnamon swirl effect.
  7. Bake: Bake in the preheated oven for 25-30 minutes, or until the bars turn golden brown and a toothpick inserted in the center comes out clean.
  8. Cool and Serve: Allow bars to cool in the pan for at least 15 minutes before cutting into squares. Serve warm or at room temperature for best flavor.

Notes

  • For a richer flavor, substitute half of the all-purpose flour with whole wheat flour.
  • Chopped pecans or walnuts add a delightful crunch, but you can omit them for a nut-free version.
  • Store leftover bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
  • Reheat bars slightly in the microwave for a soft, freshly-baked texture.
  • To make these bars vegan, substitute eggs with flax eggs and use dairy-free butter.
