Instructions

  1. Prepare the frozen yogurt mixture: In a bowl, combine the non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup or honey. Stir the mixture until it is smooth and fully combined. Then gently fold in the mini chocolate chips to add that cookie dough texture.
  2. Scoop and freeze: Line a baking sheet with parchment paper. Using a medium-large cookie scoop or spoon, portion the frozen yogurt mixture into small dollops on the baking sheet, spacing them slightly apart. Place the baking sheet in the freezer and freeze the dollops for at least 1 hour or until they are completely solid.
  3. Melt the chocolate coating: In a microwave-safe bowl or using a double boiler, melt the chocolate chips together with the coconut oil, stirring frequently until the mixture is smooth and glossy. Be careful not to overheat the chocolate.
  4. Dip the frozen bites: Remove the frozen yogurt bites from the freezer. Using a fork or skewer, dip each frozen bite into the melted chocolate to coat it thoroughly. Place the coated bites back onto the parchment-lined baking sheet.
  5. Freeze to set the chocolate: Return the chocolate-coated frozen yogurt bites to the freezer for at least another 30 minutes or until the chocolate coating has hardened completely.
