Dry Ingredients
- 1 and 1/2 cups medjool dates, packed
- 1 cup almonds
- 1 cup walnuts
- 1/4 cup shredded coconut
- 1/4 cup cocoa powder
- 1/4 tsp salt
Wet Ingredients
- 2 tsp vanilla extract
- 1–2 tbsp maple syrup (only as needed)
Add-ins
- 1/3 cup candy coated chocolate chips
- Combine ingredients: Add medjool dates, almonds, walnuts, shredded coconut, cocoa powder, vanilla extract, and salt to a food processor.
- Blend to form dough: Blend the ingredients until a sticky dough forms. If the dough is crumbly rather than sticky, add 1-2 tbsp maple syrup and blend again to help the mixture bind together and add sweetness.
- Mix in chocolate chips: Transfer the brownie dough to a bowl and fold in the candy coated chocolate chips evenly.
- Form brownie bites: Using clean hands, scoop and roll the dough into bite-sized balls.
- Serve and store: Enjoy immediately or store in a sealed container at room temperature for up to 3 days, in the refrigerator for 1 week, or freeze for up to 3 months for longer storage.
