Ingredients

Scale

Base Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 eggs
  • 1 cup oat flour (or almond flour for a lower-carb version)
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Optional Ingredients

  • 1 teaspoon olive oil (optional, for extra softness)
  • ½ teaspoon garlic powder or Italian seasoning (optional, for flavor)

Instructions

  1. Preheat & Prepare: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it to prevent sticking.
  2. Blend Cottage Cheese: Place the cottage cheese in a food processor or blender and blend until completely smooth to ensure a uniform dough texture.
  3. Mix Ingredients: In a mixing bowl, whisk together the eggs, blended cottage cheese, and olive oil if using. Then add oat flour, baking powder, salt, and your choice of garlic powder or Italian seasoning. Mix thoroughly until you form a soft dough.
  4. Shape the Flatbreads: Divide the dough into 2 or 3 equal portions. On floured parchment paper, roll each portion into thin oval-shaped flatbreads.
  5. Bake: Transfer the rolled dough along with the parchment paper onto the baking sheet. Bake in the preheated oven for 15–18 minutes until the edges turn golden brown.
  6. Cool & Serve: Allow the flatbreads to cool slightly before serving. Enjoy them warm as wraps, pizza crusts, or as dippers for your favorite soups and spreads.

Notes

  • For a lower-carb option, replace oat flour with almond flour.
  • Adding olive oil enhances softness but can be omitted for a lighter version.
  • Season the dough with herbs like garlic powder or Italian seasoning to boost flavor.
  • Ensure cottage cheese is well blended for a smooth dough texture.
  • Store leftovers in an airtight container and reheat gently before serving.
