Quinoa Mixture

  • 2 eggs

  • ½ teaspoon garlic powder

  • ½ cup mozzarella cheese
  • ¼ cup red onion, finely minced

Coating & Cooking

  • 1 cup panko breadcrumbs
  • 4 tablespoons avocado oil, divided

Instructions

  1. Prepare the quinoa mixture: In a medium bowl, combine cooked quinoa, eggs, oregano, garlic powder, salt, and black pepper. Stir in the mozzarella cheese and finely minced red onions until everything is evenly mixed.
  2. Add breadcrumbs and form patties: Add the panko breadcrumbs to the mixture and stir well. Let the mixture sit for a few minutes so the breadcrumbs can absorb some moisture, helping the patties hold together better. Wet your hands with water and use a ¼ cup measuring scoop to form the mixture into about 10 even-sized patties.
  3. Cook the patties: Heat 2 tablespoons of avocado oil in a large non-stick skillet over medium heat. Place half of the quinoa patties on the pan and cook for 3-4 minutes on each side, or until they turn a golden color and develop a crispy crust. Remove and set aside. Repeat with the remaining oil and patties.
