  1. Prepare Chickpeas: Rinse and drain the chickpeas thoroughly to remove any canning liquid and excess salt. This ensures a clean, fresh flavor in the crackers.
  2. Blend Chickpeas: Place the chickpeas into a food processor and blend until they form a smooth, dough-like ball with a texture similar to playdough.
  3. Add Oats: Add the rolled oats to the food processor and blend further until the oats are finely chopped and fully incorporated with the chickpeas.
  4. Season Dough: Add the garlic cloves, lemon juice, and salt to the mixture. Continue to blend while slowly drizzling in the olive oil until everything comes together in a cohesive dough ball.
  5. Shape Dough: Line a baking tray with baking paper. Place the dough onto the tray and press it down with your hands to begin flattening.
  6. Roll Dough: Place a second sheet of baking paper over the dough. Use a rolling pin to roll the dough evenly until it is approximately 5mm thick across the entire tray.
