Instructions

  1. Prepare and Bake the Brownies: Follow the directions on the brownie mix box to prepare and bake the brownies in a 9 x 13-inch pan. Once baked, allow the brownies to cool completely in the pan before proceeding.
  2. Cut and Layer the Brownies and Ice Cream: Using a sharp knife or cake ring, cut out two 6-inch circles from the cooled brownies. Place one brownie circle at the bottom of a 6-inch springform pan. Spread one pint of your chosen ice cream evenly over this brownie layer.
  3. Add the Second Brownie Layer and Ice Cream: Place the second brownie circle on top of the ice cream layer in the springform pan. Spread the remaining pint of ice cream evenly over this second brownie layer, smoothing the surface as much as possible.
  4. Freeze and Set the Ice Cream Cake: Cover the assembled cake with plastic wrap to protect it from freezer burn, then return the pan to the freezer. Allow the cake to set and harden for at least several hours, preferably overnight, until firm.
