Ingredients

Scale

Protein

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces

Vegetables & Produce

  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1/2 cup red onion, chopped

Dairy

  • 1 cup Tzatziki sauce
  • 1/2 cup feta cheese, crumbled

Seasonings & Oils

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat and prepare dish: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with olive oil to ensure the casserole doesn’t stick and gets a nice golden crust.
  2. Add main ingredients: Place the bite-sized chicken pieces, halved cherry tomatoes, diced zucchini, and chopped red onion into the prepared baking dish evenly spreading them out.
  3. Season and toss: Drizzle the olive oil over the mixture, sprinkle with dried oregano, and season with salt and black pepper to taste. Gently toss everything together to combine all the flavors evenly.
  4. Coat with Tzatziki sauce: Spoon the Tzatziki sauce evenly over the chicken and vegetable mixture, then gently mix again to coat all the ingredients well with the creamy sauce.
  5. Bake the casserole: Place the baking dish uncovered in the oven and bake for 30 to 35 minutes. Bake until the chicken is fully cooked through and the vegetables are tender but still hold shape.
  6. Finish and serve: Remove the casserole from the oven, sprinkle the top with crumbled feta cheese, and serve hot for a delicious, comforting meal.

Notes

  • Use a food thermometer to ensure chicken reaches 165°F (74°C) for safety.
  • Feel free to substitute vegetables according to preference, like bell peppers or eggplant.
  • Tzatziki sauce can be store-bought or homemade for more freshness.
  • Leftovers can be refrigerated up to 3 days and reheated in the oven or microwave.
  • For a spicier version, add a pinch of red pepper flakes with the oregano.
