Ingredients

Scale

For the Chicken and Vegetables

  • 4 boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 medium onion, diced
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste
  • 1 cup frozen peas (optional)
  • 1 cup heavy cream or half-and-half

For the Dumplings

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp melted butter

Instructions

  1. Prep the Chicken and Veggies: Place the chicken breasts into the crockpot. Add diced onion, sliced carrots, celery, and minced garlic to create a flavorful base.
  2. Add Broth and Soup: Pour the chicken broth and cream of chicken soup into the crockpot. Stir gently to combine. Season with dried thyme, parsley, salt, and pepper to taste.
  3. Cooking Time: Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is cooked through and vegetables are tender.
  4. Shred the Chicken: Remove chicken breasts carefully. Shred them with two forks into bite-sized pieces and return shredded chicken back into the crockpot.
  5. Add Cream and Peas: Stir in frozen peas if using, and pour in the heavy cream. Mix well until everything is creamy and combined.
  6. Make the Dumplings: In a separate bowl, whisk together flour, baking powder, and salt. Add milk and melted butter, stirring gently until just combined and slightly lumpy.
  7. Cook the Dumplings: Drop spoonfuls of dumpling batter over the hot chicken mixture in the crockpot. Cover and cook on high for 30-40 minutes until dumplings are light and fluffy.
  8. Serve and Enjoy: Scoop chicken and dumplings into bowls and enjoy a cozy, comforting meal!

Notes

  • Feel free to substitute half-and-half for heavy cream to reduce richness slightly.
  • Frozen peas are optional but add a nice pop of color and sweetness.
  • Do not overmix the dumpling batter; a few lumps help keep them tender and fluffy.
  • Cooking times may vary depending on crockpot model; adjust accordingly.
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
