  • ½1 cup pasta cooking water

Sauce and Vegetables

  • 1 cup Roasted Red Pepper Hummus (or your favorite store-bought savory hummus)
  • 1 pint grape tomatoes, halved (about 2 cups)
  • 2 cups fresh spinach leaves, chopped
  • Juice of 1 lemon
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions

  1. Cook Pasta: In a large pot on the stove, cook the pasta according to package directions in well-salted water. Before draining, reserve 1 cup of the pasta cooking water and set it aside for the sauce.
  2. Combine Ingredients: Transfer the cooked and drained pasta back to the pot. Add the hummus, halved grape tomatoes, chopped spinach, lemon juice, salt, and black pepper. Stir everything together until well combined.
  3. Create Creamy Sauce: Add ½ cup of the reserved pasta cooking water to the pasta mixture and stir well until the sauce becomes creamy and smooth. If needed, gradually add more reserved pasta water to achieve your desired sauce consistency.
  4. Adjust Seasoning: Taste the pasta and adjust the seasoning as necessary, adding more salt, pepper, lemon juice, or hummus to suit your preferences.
