Cabbage
- 1/2 medium green cabbage, about 1½ pounds
- 1 tablespoon olive oil or garlic infused olive oil
- Salt and pepper, to taste
Onion Dijon Sauce
- 3 tablespoons butter or margarine (to keep dairy free)
- 2 tablespoons minced fresh onion or shallot, or white part of sliced green onion (reserve green parts for garnish)
- 1 tablespoon Dijon mustard (or to taste)
- 1/2 teaspoon minced garlic (or 1/4 teaspoon dried granulated garlic)
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- Optional: chopped chives or parsley for serving
- Preheat and Prepare: Heat your oven to 450°F (232°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking and allow for easy cleanup.
- Cut and Season Cabbage: Cut the half cabbage into four equal wedges. Place the wedges on the prepared baking sheet. Using a pastry brush, coat the cut sides of each wedge with olive oil and season generously with salt and pepper. Turn the wedges to coat the other side the same way.
- Roast the Cabbage: Place the baking sheet in the oven and roast the cabbage wedges for 10-12 minutes. Then flip each wedge carefully and continue roasting for another 8-10 minutes until the cabbage is nicely browned and crispy on the edges. The dark brown edges add wonderful texture and flavor, so don’t worry about some charring.
- Make the Sauce: While the cabbage roasts, combine all sauce ingredients (butter, minced onion or shallot, Dijon mustard, garlic, salt, and pepper) in a small saucepan over medium heat. Stir until the butter melts and the sauce is warmed through. Alternatively, place the ingredients in a microwavable container and heat on high for about 1 minute; reheat if needed before serving.
- Serve: Arrange the roasted cabbage wedges on a serving plate. Whisk the sauce again to emulsify if needed, then drizzle it generously over the cabbage. Garnish with chopped green onion tops, chives, or parsley if desired.
Notes
- Many prefer to double the sauce recipe for extra richness and flavor.
- The sauce may separate upon sitting; whisk well right before serving to re-emulsify.
- Adding a teaspoon of cream or milk to the sauce can help keep it smooth and creamy if desired.
- Use garlic-infused olive oil for a subtle garlic flavor in the roasting step without overpowering the cabbage.
