Instructions

  2. Mix Ingredients: In a high-speed blender or food processor, combine all ingredients except the breadcrumbs. Pulse gently so that the mixture becomes combined but retains some texture, avoiding a completely smooth puree.
  3. Add Breadcrumbs: Gradually add the whole wheat breadcrumbs, pulsing the mixture again until it reaches a consistency firm enough to shape into meatballs. Use up to ¾ cup if needed to achieve the right firmness.
  4. Form Meatballs: Using your hands, roll the mixture into 1-inch diameter meatballs. Place each meatball evenly spaced on the prepared baking sheet.
  5. Bake: Bake the lentil meatballs in the preheated oven for 30 to 35 minutes. Flip them halfway through baking to ensure even browning. The meatballs should be golden brown and firm to the touch when done.
