Ingredients

Scale

Main Ingredients

  • 1 lb ground pork
  • 2 tablespoons sesame oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 2 teaspoons sriracha (optional, for heat)
  • Salt and pepper to taste

Toppings

  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon toasted sesame seeds
  • Crispy wonton strips for topping (optional)

Instructions

  1. Heat the oil and cook pork: Heat sesame oil in a large pot over medium heat. Add ground pork and cook, breaking it up with a spoon, until it is nicely browned, about 5-7 minutes.
  2. Sauté aromatics: Add the diced onion, minced garlic, and grated ginger to the pot. Sauté for 2-3 minutes until the onion becomes soft and fragrant, stirring occasionally to prevent burning.
  3. Add vegetables: Stir in the shredded cabbage and shredded carrots. Cook together for another 3-4 minutes until the vegetables are tender but still retain some crunch.
  4. Add liquids and seasonings: Pour in the chicken broth, soy sauce, rice vinegar, hoisin sauce, and sriracha if using. Stir well to combine all ingredients and bring the mixture to a boil.
  5. Simmer: Reduce heat to low and let the soup simmer gently for 10 minutes. This allows the flavors to meld together. Season with salt and pepper to your taste.
  6. Serve and garnish: Ladle the hot soup into bowls and top each serving with chopped green onions, fresh cilantro, toasted sesame seeds, and crispy wonton strips if desired for added texture and crunch.

Notes

  • For a vegetarian version, substitute ground pork with crumbled tofu or textured vegetable protein and use vegetable broth.
  • Adjust the sriracha amount to control the spiciness of the soup.
  • Use low-sodium soy sauce to reduce the sodium content if preferred.
  • Crispy wonton strips add great texture but can be omitted for a gluten-free option.
  • This soup keeps well for up to 3 days refrigerated and reheats nicely on the stovetop.
