Ingredients

Scale

Main Ingredients

  • 68 English muffins, toasted and halved
  • 8 ounces Canadian bacon or thinly sliced ham
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup hollandaise sauce (homemade or store-bought)
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • Fresh herbs (chives or parsley), chopped

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray to prevent sticking.
  2. Layer Muffins and Canadian Bacon: Arrange half of the toasted English muffin halves evenly at the bottom of the baking dish. Layer the Canadian bacon slices evenly over the muffins.
  3. Mix Egg Mixture: In a large bowl, whisk together the eggs, whole milk, salt, and black pepper until the mixture is smooth and well combined.
  4. Pour Egg Mixture: Pour the egg mixture evenly over the muffin and bacon layers in the baking dish, allowing it to soak through.
  5. Add Hollandaise Sauce: Drizzle the hollandaise sauce evenly on top of the casserole to add richness and flavor.
  6. Bake: Place the casserole in the preheated oven and bake for 30 to 40 minutes, or until the egg mixture is set and a knife inserted in the center comes out clean.
  7. Rest and Serve: Remove the casserole from the oven and let it rest for 10 minutes. Garnish with chopped fresh herbs such as chives or parsley before slicing and serving.

Notes

  • Use homemade hollandaise sauce for a fresher, richer flavor, or store-bought for convenience.
  • Toast the English muffins lightly before layering to help them hold up better during baking.
  • Feel free to substitute Canadian bacon with thinly sliced ham or turkey bacon.
  • This casserole can be prepared the night before; assemble, cover, and refrigerate, then bake the next morning.
  • Leftovers can be stored in the fridge for up to 3 days and reheated gently in the oven or microwave.
