For the Tortillas and Frying

- 2 tablespoons vegetable oil
For the Tomato Sauce

- Sauté Onion and Garlic: In the same skillet, add chopped onion and minced garlic. Sauté over medium heat until translucent, about 2-3 minutes, to release their flavors.
- Prepare the Tomato Sauce: Add tomato sauce, cumin, chili powder, salt, and pepper to the skillet. Stir well and simmer for about 5 minutes so the spices meld into the sauce.
- Preheat the Oven: Set your oven to 350°F (175°C) to prepare for baking the entomatadas later.
- Layer the Entomatadas: Spread a thin layer of the tomato sauce mixture evenly at the bottom of a baking dish. Dip each fried tortilla into the sauce, then place it in the dish. Sprinkle each tortilla with shredded cheese and chopped cilantro, and then cover with more sauce. Repeat layering until all tortillas are used.
- Top and Bake: Finish the final layer with additional cheese. Bake the assembled entomatadas for 15-20 minutes or until the cheese is melted and bubbly.
