Flatbread Dough
- 2 Cups Prepared Mashed Potatoes (approximately 2 Medium Russet Potatoes)
- 1/4 Cup Melted Butter
- 1 Egg
- 1 Cup Rice Flour
- 1/4 Cup Corn Starch (or Tapioca or Potato Starch)
- 2 Tsp Baking Powder
- 1/2 Tsp Salt
Everything Topping
- 2 Tsp Poppy Seeds
- 2 Tsp Sesame Seeds
- 2 Tsp Dried Garlic or 1/2 Tsp Garlic Powder
- 2 Tsp Dried Onion
- 1 Tsp Dried Basil
- 1/2 Tsp Salt
- Additional Melted Butter for brushing
- Prepare the Mashed Potatoes: Cook the potatoes until tender and mash them until smooth. Set aside to cool. Alternatively, use 2 cups of prepared mashed potatoes ready to use.
- Make the Dough: In a large bowl, combine the cooled mashed potatoes with melted butter and the egg. Mix until smooth. Add the rice flour, corn starch, baking powder, and salt, and stir until a smooth dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
- Preheat the Oven: Set your oven temperature to 450°F (232°C) to get it hot and ready for baking.
- Prepare the Everything Topping: In a small bowl, mix together poppy seeds, sesame seeds, dried garlic, dried onion, dried basil, and salt until evenly combined.
- Shape the Flatbreads: Remove the dough from the refrigerator and cut it into 8 equal pieces. Roll each piece into a ball then flatten gently with lightly rice-floured fingers to form flat rounds. Place the rounds on a baking sheet lined with parchment paper.
- Add Toppings: Brush the tops of the flattened dough with melted butter. Sprinkle the everything seasoning mixture evenly over each flatbread.
- Bake: Place the baking sheet in the preheated oven and bake for 15 minutes until the flatbreads are golden and cooked through.
- Finish with Butter: Remove the flatbreads from the oven and immediately brush them with more melted butter to add flavor and keep them moist.
Notes
- You can substitute tapioca or potato starch for corn starch as preferred, maintaining the same quantity.
- If you prefer vegan, replace the egg and butter with vegan alternatives for a dairy-free version.
- Ensure the mashed potatoes are well-cooled before making the dough to prevent it from becoming too sticky.
- Rice flour is used here to keep the flatbreads gluten-free and light.
- Store leftovers in an airtight container and reheat before serving for best taste.
