Wet Ingredients

  • 1¼ cups milk or non-dairy milk *See Notes
  • ⅓ cup honey
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 egg for the egg wash

Instructions

  1. Activate yeast: Add the milk and honey to a small glass dish and heat in the microwave for 25 seconds, ensuring the liquid does not exceed 110ºF. Stir to combine, then add the active dry yeast and allow it to sit for 5 minutes until it becomes bubbly.
  2. Combine wet ingredients: In a stand mixer, add the yeast mixture, melted butter, and 2 large eggs. Mix on low speed until well blended.
  3. Add dry ingredients: Add the gluten free flour blend and salt to the mixer. Begin mixing on low speed, gradually increasing to medium until combined. Alternatively, mix by hand if preferred.
  4. Shape dough: Use your hands to tear off portions of dough and roll each into balls. Place the dough balls evenly spaced on a parchment-lined baking sheet (1/4 sheet pan or 9×13 pan works well).
  5. First rise: Loosely cover the rolls with plastic wrap and allow to rise for 40-45 minutes. For optimal rising, place the covered rolls in a warm oven preheated to 200ºF and then turned off. This step may be skipped in warmer months.
  6. Prepare egg wash: Whisk the remaining egg in a small dish and brush each risen roll with the egg wash using a pastry brush.
  7. Bake rolls: Bake the honey rolls in a preheated oven at 350ºF for 20-25 minutes, adjusting baking time based on roll size, until golden brown.
  8. Cool: Remove rolls from the oven and transfer to a cooling rack. Let cool slightly before serving.
