  • 6 egg yolks (room temperature)
  • 4 ounces cottage cheese

  • ¾ cup whey protein powder
  • ¼ cup egg white protein powder
  • 1 tablespoon Allulose (optional)
  • 1 teaspoon vanilla extract (optional, for French Toast version)

Instructions

  1. Preheat Oven and Prep Egg Whites: Preheat your oven to 300°F (150°C). Place the egg whites in a stand mixer or use an electric hand mixer, add the white vinegar, and whip on high speed until stiff peaks form, about 10-15 minutes. Set aside.
  2. Combine Egg Yolks and Remaining Ingredients: In a separate bowl, whisk together the egg yolks, cottage cheese, baking powder, salt, whey protein powder, egg white protein powder, Allulose (if using), and vanilla extract (optional). Blend or whisk until smooth and well combined.
  3. Fold Mixtures Together: Gently fold a small portion of the egg yolk mixture into the whipped egg whites, gradually incorporating all of it while maintaining an airy texture.
  4. Pour and Bake: Pour the mixture into a greased and parchment-lined 5″x9″ loaf pan, or divide into a parchment-lined baking sheet or silicone mold for rolls. Bake in the middle oven rack for 50 minutes or until a toothpick inserted in the center comes out clean and the top is golden brown.
  5. Rest and Serve: After baking, turn off the oven and leave the bread or rolls inside for an additional 10 minutes with the door closed. Then remove and cool slightly before slicing.
