Ingredients

Scale

Sweet Potato Mixture

  • 4 medium sweet potatoes (approximately 2.75 pounds)
  • 1/4 cup white sugar
  • 1/4 cup firmly packed light brown sugar
  • 2 large eggs
  • 1/2 cup cream, half and half, or whole milk
  • 4 tablespoons melted unsalted butter
  • 1 1/2 teaspoons vanilla essence
  • 1/2 teaspoon salt

Topping

  • 1 cup firmly packed light brown sugar
  • 1/2 cup plain flour
  • 1/2 teaspoon ground cinnamon
  • A couple of pinches of salt (about 1/8 teaspoon)
  • 1/2 cup finely chopped pecans (optional, but recommended)
  • 4 tablespoons softened unsalted butter

Instructions

  1. Prepare the Baking Dish and Sweet Potatoes: Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish and set it aside. Peel and chop sweet potatoes into pieces yielding about 10 cups. Boil them in a large pot until tender, approximately 7 minutes. Drain and mash the sweet potatoes until smooth, resulting in about 4 cups of mashed sweet potatoes.
  2. Prepare the Sweet Potato Mixture: In a separate bowl, whisk white sugar, light brown sugar, eggs, cream (or milk), melted butter, vanilla essence, and salt until well combined. Add this egg mixture to the mashed sweet potatoes. Use a hand mixer or food processor to blend thoroughly until smooth. Pour this smooth mixture evenly into the prepared baking dish.
  3. Make the Topping: In a bowl, combine the light brown sugar, plain flour, ground cinnamon, salt, and chopped pecans using a fork. Add softened butter and use your fingers to mix it into the dry ingredients until the mixture resembles wet sand, ensuring an even crumbly texture.
  4. Assemble and Bake: Sprinkle the pecan topping evenly over the sweet potato mixture in the baking dish. Place it on the middle rack of the preheated oven and bake for 30 to 40 minutes, or until the topping is golden brown and crisp.
  5. Serve: Remove the souffle from the oven and allow it to cool slightly before serving. This souffle is best enjoyed warm as a comforting side dish or dessert.

Notes

  • You can substitute pecans with walnuts if preferred, or omit nuts altogether for a nut-free version.
  • For a dairy-free version, replace cream with coconut milk and butter with a plant-based spread.
  • Ensure sweet potatoes are well mashed for a smooth, fluffy texture.
  • Check the topping frequently in the last few minutes to prevent burning.
  • This souffle pairs wonderfully with roasted meats or can be enjoyed on its own as a sweet treat.
