- 3 cloves garlic, minced
- 1 tbsp all-purpose flour
- 2 cups milk (whole milk or 2%)
- 1 cup beef broth
- 2 cups shredded sharp cheddar cheese (or golden cheddar blend)
- 1 tsp Dijon mustard (optional)
- 1 tsp paprika
Casserole Base and Topping
- 1 package (20 oz) cheese tortellini, fresh or refrigerated
- ½ cup shredded mozzarella (for topping)
- 2 tbsp chopped parsley (for garnish)
- Preheat and Prepare Steak: Preheat oven to 375°F (190°C). Season the sirloin steak bite-sized pieces with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for 2–3 minutes per side until browned. Remove steak from skillet and set aside.

- Cook Tortellini: Cook the cheese tortellini according to package directions but slightly undercook them to avoid mushiness during baking. Drain tortellini and toss with a small amount of olive oil to prevent sticking.
- Assemble Casserole: Grease a 9×13-inch baking dish. Combine the cooked tortellini, seared steak pieces, and cheese sauce in the dish. Stir gently to mix all components evenly. Spread shredded mozzarella cheese evenly on top.
