  • 1 tablespoon fresh dill, chopped (or 1 tsp dried dill)
  • Salt, to taste

For the Couscous:

  • 1 cup couscous
  • 1 ½ cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • Salt and pepper, to taste
  • Fresh parsley or mint, chopped for garnish (optional)

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for extra flavor.
  2. Prepare the Tzatziki: In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt. Mix well and chill in the refrigerator while preparing the rest of the dish.
  3. Cook the Couscous: In a saucepan, bring the vegetable or chicken broth to a boil. Stir in olive oil, lemon zest, couscous, salt, and pepper. Cover the pan, remove it from heat, and let it sit for about 5 minutes. Fluff with a fork before serving.
