Dry Ingredients
- 3/4 cup all-purpose flour (gluten free if needed)
- 1/2 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/2 cup sugar of choice (white, brown, sugar free, etc.)
Wet Ingredients
- 1/2 cup chocolate chopped
- 1 cup vanilla Greek yogurt (see notes)
- 1/2 cup milk of choice (unsweetened almond milk used)

- 1 cup chocolate chips of choice
- Preheat and prepare pan: Preheat your oven to 180°C (350°F). Line an 8 x 8-inch baking pan with parchment paper and set aside to ensure easy removal after baking.
- Melt chocolate and mix wet ingredients: Place chopped chocolate in a microwave-safe bowl. Microwave until melted, then let it sit for 1-2 minutes. Add vanilla Greek yogurt and sugar, whisking until smooth and fully combined. Transfer this mixture to a large mixing bowl.
- Add dry ingredients: Sift together the flour, cocoa powder, and baking soda, then add these dry ingredients to the wet mixture. Stir until just combined to avoid overmixing.
- Add milk and optional chocolate chips: Pour in the milk and mix thoroughly until the batter is smooth. Gently fold in chocolate chips if using, ensuring even distribution without deflating the batter.
- Bake the brownies: Pour the batter into the prepared pan and smooth the surface. Bake for 25-30 minutes, or until a skewer inserted into the center comes out with only a few moist crumbs.
- Cool and serve: Remove brownies from the oven and cool in the pan for 10 minutes. Then carefully transfer to a wire rack to cool completely before slicing and serving.
Notes
- I used vanilla coconut Greek yogurt, but any non-fat or reduced-fat vanilla Greek yogurt works well.
- Storage: Store brownies at room temperature in a sealed container with a sheet of paper towel on top to maintain moisture. They last up to 5 days.
- Freezing: These brownies freeze well for up to 6 months. Thaw overnight in the refrigerator or at room temperature before serving.
