Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts

Vegetables

  • 2 cups broccoli florets
  • 3 cloves garlic, minced

Grains

  • 1 cup cooked grains (rice, quinoa, couscous, etc.)

Dairy & Fats

  • ½ cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Seasonings & Others

  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Grill the Chicken: Season the chicken breasts with olive oil, salt, black pepper, and any optional spices of your choice. Preheat a grill or grill pan over medium-high heat. Cook the chicken for about 6-7 minutes per side, flipping once, until the internal temperature reaches 165°F and the outside is lightly charred.
  2. Roast the Broccoli: Preheat your oven to 400°F (200°C). Toss the broccoli florets with olive oil, lemon juice, and a pinch of salt. Spread them evenly on a baking sheet and roast for 15 to 20 minutes, until the broccoli is crisp-tender and slightly browned.
  3. Cook the Grains: Prepare your choice of grains according to the package instructions. Once cooked, fluff them with a fork and keep them warm until assembly.
  4. Make the Creamy Garlic Sauce: In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1 to 2 minutes until fragrant but not browned. Stir in the heavy cream, season with salt and black pepper, and let the sauce simmer gently until it thickens slightly, about 3 to 5 minutes.
  5. Assemble the Bowls: In serving bowls, start by layering the cooked grains. Slice the grilled chicken breasts and arrange them on top. Add the roasted broccoli florets. Drizzle generously with the creamy garlic sauce, garnish with fresh parsley or chives if desired, and serve immediately.

Notes

  • You can substitute the broccoli with other vegetables like asparagus or green beans.
  • For a lighter sauce, you may use half-and-half or milk instead of heavy cream, but the sauce won’t be as thick.
  • Use a meat thermometer to ensure the chicken is safely cooked to 165°F internal temperature.
  • This dish can be made gluten-free by choosing gluten-free grains such as rice or quinoa.
  • Leftovers keep well in the refrigerator for up to 3 days; reheat gently before serving.
