For the Dough
- ¾ cup full-fat coconut milk
- 2 tablespoons apple cider vinegar
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 3 cups almond flour
- 2 cups tapioca flour
- ½ teaspoon baking soda
- 3 teaspoons baking powder
For the Maple Pecan Filling
- ¼ cup coconut oil, melted
- ⅓ cup coconut sugar
- 2 tablespoons maple syrup
- 1 tablespoon cinnamon (plus more for topping)
- 1 ¼ cups chopped pecans
For the Cream Cheese Icing
- ½ cup vegan cream cheese
- 1 tablespoon unsweetened almond milk
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- Prepare the Dough: Preheat your oven to 350°F (175°C). In a large bowl, combine the full-fat coconut milk, apple cider vinegar, maple syrup, and vanilla extract. Whisk these ingredients together until the mixture becomes thick and creamy, which will help activate the baking agents.
- Add Dry Ingredients: To the wet mixture, add the almond flour, tapioca flour, baking powder, and baking soda. Mix everything until a large ball of dough forms. The resulting dough will be slightly sticky and soft. Set aside to rest while you make the filling.
- Make the Maple Pecan Filling: In a medium bowl, whisk together the melted coconut oil, coconut sugar, and maple syrup until most of the sugar dissolves. Stir in the cinnamon and chopped pecans to combine thoroughly. Set the filling aside.
- Roll Out the Dough: On a flat surface, lay down a long piece of parchment paper about 26 inches in length and sprinkle extra tapioca flour over it to prevent sticking. Roll out the dough into a rectangle approximately ½ inch thick. Spread the maple pecan filling evenly over the dough, leaving about an inch border on all sides to contain the filling during rolling. Sprinkle additional cinnamon on top if desired.
- Form the Rolls: Starting from one of the long edges, pinch the edge of the dough tight and use the parchment paper to guide you as you roll the dough carefully into a tight log. Use kitchen string or dental floss to slice the log into individual rolls about 2 inches thick by wedging the string underneath and slicing through. You should end up with 11 to 12 cinnamon rolls.
- Arrange and Bake: Place each cinnamon roll into a baking dish, such as a 9-inch pie pan, or an 8×8 or 9×9 square baking dish, leaving space between each roll. Bake for 15 to 20 minutes until the rolls have risen and the tops turn a light golden brown.
- Prepare the Icing: While the rolls cool slightly for 3 to 5 minutes, mix vegan cream cheese, maple syrup, almond milk, and vanilla extract in a small bowl until smooth and creamy.
- Finish and Serve: Drizzle the cream cheese icing over the warm cinnamon rolls and enjoy this healthy, flavorful treat fresh from the oven.
Notes
- Ensure the coconut milk is full fat for better texture in the dough.
- Tapioca flour helps to give the dough elasticity and chewiness important for gluten-free baking.
- Use kitchen floss or string to cut the rolls evenly without squashing.
- Allow rolls to cool slightly before icing so the topping doesn’t melt completely.
- Storage: These cinnamon rolls keep well covered in the fridge for up to 3 days. Reheat gently before serving.
- To make it nut-free, substitute almond flour with a seed flour blend, but texture may vary.
