  • 1 bay leaf

  • 2 cups chopped kale or spinach
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until it becomes soft and translucent, about 5 minutes. Then add the minced garlic, sliced carrots, and chopped celery, cooking for another 3-4 minutes until fragrant and slightly tender.
  2. Add Vegetables and Broth: Stir in the cubed russet and sweet potatoes, chopped zucchini, green beans, canned diced tomatoes, and chickpeas. Pour in the vegetable broth and add dried thyme, smoked paprika, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer gently for 25 to 30 minutes, allowing the vegetables to cook through and flavors to meld.
  3. Finish and Serve: About 5 minutes before serving, stir in the chopped kale or spinach and let it wilt into the stew. Remove the bay leaf, then stir in the lemon juice if using, which adds brightness to the stew. Taste and adjust seasoning with additional salt and pepper if needed.
