Instructions

  1. Roast Hazelnuts: Preheat the oven to 400°F (200°C). Spread hazelnuts in a single layer on a baking sheet and roast for 6-8 minutes or until they start to brown and become fragrant.
  2. Remove Skins: Transfer the roasted hazelnuts to a clean kitchen towel or paper towel, and rub them together to remove most of the skins. Some skins may remain and that’s fine.
  3. Blend Nuts into Butter: Place the skinned hazelnuts in a food processor or high-powered blender like a Vitamix. Blend continuously until the nuts transform into a smooth butter; this may take up to 20 minutes in a food processor, scraping down the sides as needed.
  4. Add Flavorings and Sweetener: Add the vanilla extract, cocoa powder, sweetener of choice, and salt to the nut butter. Continue blending until the mixture is very smooth and resembles Nutella in texture and taste.
  5. Adjust Consistency (Optional): If desired, slowly add milk or oil to the mixture and blend until the spread reaches your preferred creaminess and pourable consistency.
  6. Store: Transfer the homemade Nutella to an airtight container. Store it at room temperature for up to 2 weeks or refrigerate for longer shelf life, allowing it to come to room temperature before use.
