Homemade Zhoug Sauce is a vibrant, spicy green sauce originating from Yemen, popular in Middle Eastern cuisine. Made with fresh jalapeños, garlic, parsley, cilantro, and a blend of aromatic spices, this zesty sauce is perfect for adding a flavorful kick to grilled meats, vegetables, sandwiches, or as a dip.

  • 4 large jalapeño peppers, stems and seeds removed, sliced in half
  • 6 cloves garlic
  • 1 cup fresh parsley, coarsely chopped
  • 1 cup fresh cilantro

  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cardamom
  • ½ teaspoon red pepper flakes

  • ½ cup olive oil

Instructions

  1. Blend the ingredients: Place all ingredients except the olive oil in the bowl of a food processor. Pulse until everything is chopped and begins to come together into a coarse mixture.
  2. Add olive oil: With the food processor running, slowly pour the olive oil through the opening in the lid. Continue processing until the sauce emulsifies into a smooth, thick consistency.
  3. Scrape the bowl: Stop the food processor and scrape down the sides with a spatula. Pulse a few more times to ensure all ingredients are fully incorporated and the sauce reaches the desired thickness.
  4. Season to taste: Taste the zhoug and adjust the seasonings as needed. Add more salt or red pepper flakes in 1/4 teaspoon increments if a saltier or spicier flavor is desired, pulsing after each addition.

  • Zhoug can be stored in an airtight container in the refrigerator for up to one week.
  • For a milder sauce, remove the seeds from the jalapeños completely or use fewer peppers.
  • Use fresh herbs for the best flavor and vibrant color.
