Ingredients

Scale

Dry Ingredients

  • 1 cup mixed nuts (almonds, cashews, pecans)
  • 1 cup rolled oats
  • 1/2 teaspoon sea salt (plus extra for topping)

Wet Ingredients

  • 1 cup dark chocolate chips (70% cocoa)
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper to prevent sticking and make removal easy.
  2. Melt Chocolate and Coconut Oil: In a microwave-safe bowl, combine the dark chocolate chips with coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  3. Mix Ingredients: In a large mixing bowl, combine the mixed nuts, rolled oats, honey or maple syrup, vanilla extract, and half of the melted chocolate mixture. Stir thoroughly to ensure all components are evenly coated.
  4. Press Mixture Into Pan: Transfer the mixture to the prepared baking dish and firmly press it down to create an even layer. Drizzle the remaining melted chocolate evenly on top.
  5. Bake: Bake the bars in the preheated oven for 15 to 20 minutes, or until the edges turn golden brown and the bars are set.
  6. Add Sea Salt Topping: Once out of the oven and still warm, sprinkle sea salt over the bars to add a salted contrast to the sweetness.
  7. Cool and Cut: Allow the bars to cool completely in the pan, then lift from the parchment paper and cut into squares for serving.

Notes

  • For a vegan version, substitute honey with maple syrup.
  • Use a variety of nuts based on preference or what’s available.
  • Ensure bars are fully cooled before cutting to avoid crumbling.
  • Store bars in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
  • Adjust sea salt topping to taste; a little goes a long way to enhance flavors.
