Instructions

  1. Prepare the pie crust: Roll out half a batch of Simply Perfect Pie Crust and fit it into a pie plate. Chill the crust in the refrigerator to firm it up while you prepare the filling.
  2. Prepare the apple filling: Peel, core, and grate 8 Granny Smith apples. Place the grated apples in a bowl and add 1/4 cup of water, 2 tablespoons of lemon juice, and half the sugar (about 1/2 cup). Mix gently to combine and let sit for a few minutes to allow flavors to meld.
  3. Prepare the custard base: In a separate bowl, whisk together 6 large egg yolks and the remaining 1/2 cup of sugar until thick and pale. Gradually fold in the apple mixture.
