Ingredients

Scale

Meatloaf Ingredients

  • 2 pounds Ground Chicken or lean pork/turkey
  • 1 cup Parmesan Cheese, shredded
  • 1 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Minced Garlic
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Whole Milk (or plant-based milk)

Glaze Ingredients

  • 2 tablespoons Unsalted Butter
  • 1/4 cup Additional Parmesan
  • 2 tablespoons Fresh Parsley

Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper or grease a loaf pan to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and milk. Mix gently until just combined to keep the meatloaf tender.
  3. Shape Meatloaf: Shape the mixture into a loaf and place it on the prepared baking sheet or into the loaf pan for even cooking.
  4. Bake the Meatloaf: Bake the meatloaf for 40–45 minutes or until the internal temperature reaches 74°C (165°F) to ensure it is fully cooked and juicy.
  5. Prepare Garlic Parmesan Glaze: While the meatloaf is baking, melt the unsalted butter in a saucepan over medium heat. Add minced garlic and cook for a minute, then stir in the Parmesan cheese and fresh parsley until the glaze slightly thickens.
  6. Glaze and Finish Baking: Brush the prepared garlic Parmesan glaze evenly over the meatloaf, then return it to the oven for an additional 5–7 minutes to set the glaze and enhance flavor.
  7. Rest and Serve: Remove the meatloaf from the oven and let it rest for 5 minutes. Slice and garnish with fresh parsley before serving for a beautiful presentation and enhanced aroma.

Notes

  • You can substitute ground turkey or pork for chicken depending on your preference.
  • For a dairy-free version, use plant-based milk and dairy-free cheese alternatives.
  • Adding shredded zucchini to the meat mixture adds extra moisture and vegetables without altering the flavor much.
