Ingredients

Scale

Main Ingredients

  • 90 ml (around 1/3 cup plus 2 teaspoons) heavy cream
  • 200 g (7 oz) dark cooking chocolate (40% cocoa), finely chopped
  • 1 teaspoon finely grated orange peel
  • 1/3 cup chocolate sprinkles

Instructions

  1. Prepare the Equipment and Ingredients: Line a small, flat dish with non-stick baking paper, such as a 13 x 18 cm (7 x 5 inch) Pyrex dish. Place the chocolate sprinkles in a small bowl and line a baking tray with non-stick baking paper for later use.
  2. Heat the Cream and Melt the Chocolate: In a small saucepan, combine the cream and freshly grated orange zest. Warm the mixture slowly over low heat until it is just below boiling point, then remove from heat. Add the chopped dark chocolate and stir gently until fully melted and the mixture is smooth and glossy.
  3. Chill the Chocolate Mixture: Pour the chocolate mixture into the lined dish, smoothing it evenly. Refrigerate for about 2 hours until firm enough to handle and roll into balls.
  4. Shape the Chocolate Balls: Using a small ice cream scoop or teaspoon, scoop about 3 level teaspoons of the chilled chocolate mixture. Quickly roll each portion into a compact ball. If the mixture is too firm, let it rest at room temperature for 5–10 minutes. Use an ice pack or frozen peas to cool your hands during rolling and dry your hands with paper towels as needed.
  5. Coat in Chocolate Sprinkles: Roll each chocolate ball in the bowl of sprinkles, ensuring even coating, then place them on the prepared baking tray.
  6. Refrigerate and Store the Truffles: Chill the coated truffles in the refrigerator for at least 30 minutes until firm. Store them in an airtight container in the refrigerator for up to one week, using non-stick baking paper between layers if stacking.

Notes

  • Use dark cooking chocolate with at least 40% cocoa for the best flavor and texture.
  • Grate fresh orange peel carefully to avoid the bitter white pith.
  • Keep your hands cool and dry when rolling the truffles to prevent sticking.
  • Store truffles in an airtight container and consume within one week for optimal freshness.
  • You can experiment with different coatings such as cocoa powder or chopped nuts.
