Instructions

  1. Select Tomatoes: Choose large, ripe tomatoes that are firm yet slightly soft. Rinse them thoroughly under cold water and pat dry with a clean towel to prepare for slicing.
  2. Slice Tomatoes: Slice the tomatoes into wedges, rounds, or cubes, making sure all pieces are uniform in size to ensure even marination.
  3. Prepare Marinade: In a separate bowl, combine the extra virgin olive oil and balsamic vinegar. Add sea salt and freshly ground black pepper, then stir in the minced garlic along with chopped fresh basil and parsley (or their dried alternatives).
  4. Add Optional Heat: If you like a bit of spice, incorporate red pepper flakes into the marinade and whisk everything together until well blended.
  5. Marinate Tomatoes: Place the sliced tomatoes in a large mixing bowl and pour the prepared marinade over them. Gently toss the tomatoes to coat them thoroughly with the dressing.
  6. Let Rest: Cover the bowl with plastic wrap or transfer the tomatoes and marinade into a resealable plastic bag, removing excess air. Allow the tomatoes to marinate at room temperature for at least 30 minutes or up to 2 hours for deeper flavor penetration.
