Almond Mixture
- 2 cups raw almonds
- 1 egg white
- 1½ teaspoons fresh orange juice
Candied Sugar Mixture
- ⅓ cup white granulated sugar
- ⅓ cup brown sugar, tightly packed
- ¼ teaspoon salt
- Zest from 1 orange
- Preheat Oven: Preheat your oven to 250°F (120°C) and line a baking sheet generously with foil or parchment paper to prevent sticking and aid cleanup.
- Prepare Sugar Mixture: In a medium-sized bowl, combine the white granulated sugar, tightly packed brown sugar, salt, and fresh orange zest. Stir well to evenly distribute all ingredients and set aside.
- Whisk Egg White: In a large bowl, whisk the egg white until frothy, which should take about 1 minute. Incorporate the fresh orange juice into the frothy egg white mixture.
- Coat Almonds: Add the raw almonds to the egg white and orange juice mixture. Toss thoroughly until all almonds are evenly coated with the frothy mixture.
- Add Sugar Mixture: Pour the prepared sugar and orange zest mixture over the coated almonds. Mix well to ensure every almond is covered with the sugary blend.
- Bake the Almonds: Spread the almonds in a single layer on the prepared baking sheet, leaving a little space between them. Bake in the preheated oven for 1 hour, stirring every 20 minutes to prevent clumping and to ensure even coating and roasting.
- Cool and Store: After baking, allow the almonds to cool completely on the baking sheet. Once cooled, store them in an airtight container in a dark, cool place for 1-2 weeks, or freeze for up to 3 months.
Notes
- Use foil on your baking sheet for easier cleanup as the sugar mixture tends to stick strongly to parchment paper or silicone mats.
- This recipe can be easily doubled or tripled. When doing so, roast almonds in batches and avoid overcrowding to prevent steaming and clumping.
- Ensure almonds are completely cooled and dry before storing them to maintain crispiness.
- Freezing candied almonds preserves freshness; store in freezer-safe containers and thaw briefly at room temperature before serving.
