Ingredients

Scale

Dough

  • ¾ cup milk, warmed to about 110°F (about 40 seconds in the microwave)
  • 2 ¼ teaspoons active dry yeast
  • 1 large egg, room temperature
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon kosher salt (or ½ teaspoon table salt)
  • 3 cups (375 g) all-purpose flour
  • 1 cup (226 g / 2 sticks) unsalted butter, cold

Filling

  • 4 tablespoons butter, room temperature
  • ½ cup (100 g) packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon orange zest
  • 1 teaspoon ground cardamom
  • Pinch kosher salt

Glaze

  • 2 cups confectioner’s sugar
  • ¼ cup orange juice (or juice from one orange)

Instructions

  1. Activate Yeast: Warm ¾ cup of milk to about 110°F (easily done in about 40-45 seconds in the microwave). Stir in the yeast and let it bloom until bubbly, about 5 minutes.
  2. Mix Dough Ingredients: In a large bowl, combine the yeast mixture, egg, sugar, and salt. Set this mixture aside. Grate the cold butter using a grater onto a surface, then add it along with the flour to the bowl.
  3. Form Dough: Incorporate ingredients using your hands until just combined. You can knead by hand or use a stand mixer with a dough hook attachment until the dough forms a ball. Cover the bowl and let the dough rise for one hour.
  4. Roll Out Dough: After rising, place the dough on a floured surface and roll it out evenly to a ½ inch thickness into a rectangle.
  5. Prepare Filling: Spread the softened butter evenly all over the dough, reaching the edges. In a small bowl, mix the brown sugar, flour, orange zest, cardamom, and a pinch of salt.
  6. Assemble Twist: Sprinkle the brown sugar mixture over the buttered dough. Starting from the longer side, roll the dough tightly into a log, sealing the seam. Place the log seam side down.
  7. Cut and Twist: Use a sharp knife to cut the log lengthwise in half, stopping about 1 inch from one end. Begin lifting one half over the other starting from the uncut end, twisting the two halves together 2-3 times. Then, twist the entire dough around one end to form a circle with the cut layers facing up.
  8. Second Rise: Place the twisted dough ring in an 8 or 9-inch buttered skillet and cover. Allow it to rise again for one hour.
  9. Bake: Preheat the oven to 350°F. Uncover the skillet and bake the bread twist for 25 minutes. Then cover with foil and bake an additional 10 minutes until the bread is golden brown. Remove and let cool.
  10. Prepare Glaze: Whisk confectioner’s sugar and orange juice until smooth and runny. After the bread has cooled for about 10 minutes, generously drizzle the glaze over the twist, letting it soak into all the crevices.
  11. Serve: The bread can be enjoyed warm or at room temperature, perfect for breakfast or brunch.

Notes

  • Make sure the milk is warm but not hot to avoid killing the yeast.
  • Cold butter grated for the dough helps create a tender, flaky texture.
  • The twist shape showcases the beautiful layers and filling.
  • Use fresh orange juice for the glaze for the best flavor.
  • Store leftover bread in an airtight container; it keeps well for 2-3 days.
  • You can reheat slices gently in the oven or microwave before serving.
