Ingredients

Scale

For the Chicken Wraps:

  • 3 cups coleslaw mix
  • 1 cup shredded carrots
  • 1/3 cup roasted peanuts
  • 1/4 cup chopped fresh cilantro
  • 2 cooked chicken breasts, chopped or sliced
  • 6 large tortillas

For the Peanut Sauce:

  • 1/4 cup honey
  • 1/4 cup olive oil or vegetable oil
  • 1/4 cup peanut butter
  • 3 tablespoons unseasoned rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon grated fresh ginger
  • 1 large garlic clove, minced

Instructions

  1. Prepare the Peanut Sauce: In a medium bowl, whisk together honey, olive oil, peanut butter, rice vinegar, soy sauce, sesame oil, black pepper, salt, crushed red pepper flakes, grated ginger, and minced garlic until smooth and well combined.
  2. Combine Vegetables and Peanuts: In a separate bowl, mix the coleslaw mix, shredded carrots, chopped cilantro, and roasted peanuts. Pour the peanut sauce over this mixture and stir thoroughly to coat all ingredients. Let this sit for a few minutes to allow the flavors to meld.
  3. Warm the Tortillas: Heat the tortillas in the microwave for about 10 seconds each to make them more pliable and easier to roll without tearing.
  4. Assemble the Wraps: Evenly divide the cooked chicken among the warmed tortillas. Add an ample amount of the peanut-coated coleslaw mixture on top of the chicken.
  5. Roll and Secure: Tightly roll each tortilla to enclose the filling. Use toothpicks if needed to keep the wraps secure. Serve immediately or wrap in foil for later enjoyment.

Notes

  • You can substitute grilled chicken with rotisserie chicken to save time.
  • For a spicier kick, add extra crushed red pepper flakes or a splash of sriracha to the peanut sauce.
  • To keep wraps fresh for later, wrap them tightly with parchment paper or plastic wrap before refrigerating.
  • Gluten-free tortillas can be used to accommodate gluten sensitivities.
  • Roasted peanuts can be replaced with cashews for a slightly different flavor and texture.
